If it goes that long and the deadline passes he will go back into the draft next year. I can only remember 1 time it happened off the top of my head:
1990 Craig Erickson drafted by the Eagles and then went back into the draft and was drafted by the Bucs.
According to my search, a team who drafts a player retains the signing rights for a period of one year, up until the following year's draft.
If a player hasn't signed by that point, they go back into the draft pool of that new draft year.
They obviously would not have gotten paid nor accrued any service time if they sat out the whole year.
As for how far into the season they can go before accruing service time for that year, I haven't found confirmation of whether it follows the franchise tag rule, but FT requires a player to have signed before the Tuesday after Week 10 to count the rest of the season as a year of service.

Zac Taylor 2023: 9 wins despite losing Burrow half the season
Zac Taylor 2024: Started 1-4. Ended 9-8 but barely missed playoffs
Changes needed to do better in Sept/Oct moving forward.
